Gluten-Free Cinnamon Coffee Cake

Mmmmmm. Coffee cake.

This morning I set out to whip up a batch of muffins from my beloved King Arthur GF Muffin Mix. But, alas, I was out of muffin tin liners. (My muffin tin is kind of ancient and liners are mandatory.)

Somewhere from my sleep deprived mind floated the idea of coffee cake. So this is what I did:

Gluten-Free Cinnamon Coffee Cake

• 1 package King Arthur GF muffin mix
• 1 c milk (today I used flaxseed milk)
• 6 Tbsp melted + 2 Tbsp soft butter
• 1/4-1/3 c sugar or xylitol
• 1 tsp cinnamon

• Preheat oven to 375F
• Grease 8×8 cake pan
• Follow package directions for mix, leaving aside 1/3 cup of mix
In a small bowl combine cinnamon and sugar
• Pour half of muffin batter into pan
• Sprinkle half of cinnamon sugar on top of batter
• Pour remaining batter over cinnamon sugar
• Add 2 Tbsp butter and 1/3 c muffin mix to remaining cinnamon sugar and blend with a fork
• Evenly distribute cinnamon mixture on top of batter
• Bake 25-30 mins, until middle springs back from touch or a fork comes out clean.
