I had 2 lbs of pre-cubed sweet potatoes that never got made at Christmas (yay Trader Joes!). I needed to cook them before they turned and I wanted something easy. I thought about roasting them with just cinnamon, but grabbed the pumpkin pie spice by accident. I added ground cumin to approximate garam masala. The result: delicious! This would work equally well with butternut squash and be SCD-compliant.
Spiced Roasted Sweet Potatoes
2 lbs peeled and cubed sweet potatoes or butternut squash
1-2 Tbsp fat of choice
1 tsp ground cumin
1 tsp pumpkin pie spice
1/2 tsp salt
Pre-heat oven to 375.
Pre-grease roasting tray
Prep 2 lbs of sweet potatoes. Peeled and cut into 1″ cubed.
Toss with melted fat or oil.
Toss with spiced and salt, ensure spices and oil are evenly distributed.
Spread evenly on tray.
Roast for 45 mins, or until done.
