Freakin’ delicious spiced roasted sweet potatoes


I had 2 lbs of pre-cubed sweet potatoes that never got made at Christmas (yay Trader Joes!). I needed to cook them before they turned and I wanted something easy. I thought about roasting them with just cinnamon, but grabbed the pumpkin pie spice by accident. I added ground cumin to approximate garam masala. The result: delicious! This would work equally well with butternut squash and be SCD-compliant.

Spiced Roasted Sweet Potatoes


  • 2 lbs peeled and cubed sweet potatoes or butternut squash
  • 1-2 Tbsp fat of choice
  • 1 tsp ground cumin
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • Directions:

  • Pre-heat oven to 375.
  • Pre-grease roasting tray
  • Prep 2 lbs of sweet potatoes. Peeled and cut into 1″ cubed.
  • Toss with melted fat or oil.
  • Toss with spiced and salt, ensure spices and oil are evenly distributed.
  • Spread evenly on tray.
  • Roast for 45 mins, or until done.
