Best Gluten Free Cupcake!


I have spent 12 years–12 YEARS!–in search of a decent gluten-free cupcake. My homemade attempts were just pathetic, the mixes I tried were meh, and cupcakes from the gluten-free bakery run about $3-4 each.

But now, my search is over! I just tried the King Arthur Flour Gluten-Free Yellow Cake Mix and it is A-MAZ-ING.

My kids started devouring these as soon as they were out of the oven. Unfrosted, even. It has lovely crumb, beautiful texture, and the mouthfeel of a gluten bomb cupcake.

Better yet, they got gobbled up at my 9 year old’s birthday party. In the past, most of my GF cupcakes would have a polite nibble or two taken out, the frosting licked off, and the rest would be discarded.

Not these babies! I made about 40 cupcakes for a party with maybe 30 people (most of the moms didn’t take any cake) and there were 4 cupcakes left over. So somebody had more than one. More than one
