Quinoa Pilaf

For a change up from rice, I made this pilaf using what I had on hand. It only takes a few minutes more than whipping up a batch of steamed rice. (Especially since I use a rice cooker–shhhh!)

It matches with hot sauce like a boss. I plan to use leftovers to make some quinoa patties for my mostly vegan dad.

Quinoa Pilaf


  • 1 c uncooked quinoa
  • 2 c vegetable broth or chicken broth (if using a rice cooker, follow manufacturer’s direction for amount of liquid)
  • 1/2 c canned chickpeas
  • 1/2 c mixed frozen vegetables
  • 2 tsp poultry seasoning
  • 1/2 tsp salt
  • Directions:

  • Rinse quinoa in a wire strainer for a full minute to wash the saponin layer off grain.
  • Stove top: bring broth to a boil, add remaining ingredients. Cover and reduce heat. Steam for 20 minutes.
  • For rice cooker: Throw it in and push button for White Rice.
  • It’s almost Cooking for Dummies.
