For a change up from rice, I made this pilaf using what I had on hand. It only takes a few minutes more than whipping up a batch of steamed rice. (Especially since I use a rice cooker–shhhh!)
It matches with hot sauce like a boss. I plan to use leftovers to make some quinoa patties for my mostly vegan dad.
1 c uncooked quinoa
2 c vegetable broth or chicken broth (if using a rice cooker, follow manufacturer’s direction for amount of liquid)
1/2 c canned chickpeas
1/2 c mixed frozen vegetables
2 tsp poultry seasoning
1/2 tsp salt
Rinse quinoa in a wire strainer for a full minute to wash the saponin layer off grain.
Stove top: bring broth to a boil, add remaining ingredients. Cover and reduce heat. Steam for 20 minutes.
For rice cooker: Throw it in and push button for White Rice.
