Chicken Adobo, TJ style

“Here. Make this for dinner.”

Sometimes the Trader Joe’s demo meal is exactly what we need. This morning I stopped by to get coffee and some snacks, but walked out with a great dinner.

As soon as we walked in, my youngest kiddo Mike took a deep breath and sighed. “That smells so good. Can I have some?”

We wheeled the cart back to demo booth and checked out the ingredients. Mostly cool, but we use GF tamari instead of soy sauce with wheat. He was willing to forego a taste, if I could replicate it at home.

Here’s what we got:

Yes, I bought pre-cooked rice. It’s not WAPF compliant, but it’s one thing I don’t have to cook. I believe I mentioned my fatigue has reappeared. Yeah, so, I saved myself 10 mins.

The vinegar is a new twist. I’ve used rice vinegar in the past, but liked the slight fruity influence of this one. Nice job TJ’s!

I served it with Roasted Curried Cauliflower (recipe coming) and jasmine rice.

To make it paleo, sub coconut aminos for the tamari and make cauliflower rice.

Chicken Adobo, TJ Style

Ingredients:

  • 3 lbs chicken pieces or 1 chicken cut up
  • 1 tsp cooking fat of choice
  • 1/2 large onion, thinly sliced
  • 2-3 garlic cloves, finely minced
  • 1/4 c. GF tamari
  • 1/4 c. vinegar, rice or champagne
  • 1/2 c. chicken broth
  • Directions:

  • Preheat oven to 350
  • Grease roasting pan
  • Heat fat in skillet
  • Add sliced onion and cook until soft
  • Spread cooked onion in prepped roasting pan
  • Put chicken pieces on top of onion
  • Mix tamari, vinegar and chicken broth
  • Pour over chicken
  • Cover loosely with foil, bake for 45 minutes or until chicken is cooked and juices run clear.
