I joined a CSA this month, Farm Fresh to You. Every Wednesday morning I find a lovely box of organic fruit and veg on my doorstep. Every other week I get a dozen pastured eggs as well.
The produce is lovely–fresh, lush, beautifully colorful and fragrant.
But I can’t get through it. It’s never a mind boggling amount of food, but I’ve realized I just haven’t been cooking enough to fully utilize what’s been delivered. I’m sad to say I lost out on a cantaloupe, a couple of green peppers and a zucchini or two.
Here’s my new plan: make a plan. Revolutionary, I know. My feeble attempts at meal planning were always centered on the protein of the day–meatball Monday, Taco Tuesday, etc.– but I’m going to shift to accommodate my CSA haul.
So this week’s delivery included:
1 lg head of Romaine
1 lb apricots
1 lb broccoli
2 green peppers
1 lb baby potatoes
1 sm bunch of carrots
…a couple of nectarines.
So, salad, fajita veggies, zucchini fritters and fruit salad. That should take care of most of it. A vat of broth will be home to the stragglers.
