Meal planning for March

Yes, I know the month is fully 1/3 over, but I was felled, and thoroughly, by a flu/sinus infection/cold/cough assault that lingers still on Day 19. Despite rigorous application of allopathy, naturopathy, homeopathy and homemade chicken soup, I have been unable to shake this illness.

My brain has suffered mightily. I have been wandering in a thick fog of fatigue and forgetfulness. And some days that has included forgetting to make dinner. So this post is late. But I’m hoping it will help me avoid the “Oh no, what’s for dinner?” issue.

Meatball Monday:
Chipotle Dijion Turkey from Slim Palate
Kyle’s special recipe
Italian chicken sausage
Chicken apple

Taco Tuesday:
Skirt steak from Practical Paleo
Shredded chicken
Nom Nom Paleo’s Mexican beef
Carne Asada

Crockpot Wednesday:
Chuck roast
Slow cooker chicken
Tortilla Soup
Asian short ribs

Chicken Thursday:
BBQ pulled chicken
Aji’s chicken
Roli Roti rotisserie chicken
Chicken steaks — dredge in GF flour, dip in beaten egg, roll in GF bread crumbs, pan fry

Burgers Friday:
Sweet potato and bacon burgers
Spicy chicken burgers
Nom Nom Paleo sliders
