I’m trying to build my repertoire of fast, easy, tasty GFCF meals. Chicken tenders are always quick and I usually have a package in the freezer.
I have it on good authority (specifically my friend Nina whose middle name is something fabulous like Theodora and who got notes in Greek from the tooth fairy) that the signature flavorings are olive oil, lemon and oregano. Save the garlic for the veggies.
For stronger flavor, double the olive oil and lemon and marinate for an hour or more.
Easy Greek Chicken<
• 1 lb chicken tenders
• 2 Tbsp olive oil
• 1 tsp dried oregano
• Zest and juice 1 lemon
• Salt and pepper to taste
• Season chicken with salt, oregano and and a little pepper.
• Heat oil in large sauté pan over med-low heat.
• Cook chicken through — no more pink. Be careful not to over cook.
• Add lemon zest and juice
• Turn up heat to med-high to brown chicken pieces.
If you want, you can make a little gravy: remove the chicken to a plate.
Remove pan from heat
Add 1-2 Tbsp GF flour to whatever drippings remain, stirring until there are no lumps
Add 1 cup chicken broth to pan. Stir to mix well, no lumps! A whisk works well. Turn heat back on under pan, cook until thick.
Add salt to taste.
