Kyle’s Special Recipe…adapted from Practical Paleo

ImageToday my 8 year old helped me make some delicious meatballs…and we turned half the recipe into nuggets.  I got the original recipe from Practical Paleo author Diane Sanfilippo’s Balance Bites Facebook feed.  She used ground beef.  I’ve substituted turkey, left out the egg because of my own allergy, rolled them in sweet potato flour and fried them up as little patties.  Diane was kind enough to respond to my question about flour substitutes and sent me links on Amazon for plantain flour and sweet potato flour.

These are GFCF and paleo.  As noted, I made my batch without egg, but I have included the egg in this recipe as it does make the meatballs juicier.

This is how it looked in my kitchen, with my special assistant:

Yummy Paleo Meatballs, or Kyle’s Special Recipe

1 to 1.5 lbs ground meat (I used turkey thigh)

1 c. roasted butternut squash, mashed

1 egg, beaten

2 Tbsp Savory Spice blend from Practical Paleo

For patties:

1/2 c. sweet potato or plantain flour for dusting

1/2 c. palm shortening or coconut oil for frying

Preheat oven or prep small fry pan

Combine ingredients in large bowl.

Roll mixture into 1″ meatballs.

Bake at 375F for 10 mins.  Turn meatballs over, bake for an additional 10 mins.

For patties:

Dust in flour, press flat.

Fry in oil over medium heat. Drain on paper towel-lined plate.  Salt.

I served these with hot sauce.  They were a BIG hit with my guy.
